Dassai 23 Junmai Daiginjo 1.8L

The Dassai 23 is made from Yamada Nishiki genmai brown rice. With the rice milled down to the lowest percentage of all Dassai sakes of only 23% (hence the name Dassai 23), this is one of the best sakes that give particular credence to its rice milling process. 

Dassai 23 production is in Asahi Shuzo’s brewery that is located outside the city of Iwakuni in the Japanese Yamaguchi prefecture. Sold around the world and touted as one of the best sakes, the Dassai 23 is a high grade sake due to its quality and fantastic taste. 

With over three-quarters of the exterior grain polished away, the Dassai 23 sake is truly one of the most remarkable sakes in the world. Very few breweries other than Asahi Shuzo Company have even attempted to create a sake using Yamada Nishiki genmai brown rice that has been so highly polished. In fact, not many breweries even possess the technology to do so! The secret to Asahi Shuzo ensuring quality is by having the majority of the process done by human hands and not machinery! Although it takes time, it is well worth the effort. 

Fruity yet clean with plump Daiginjo flavours and aromas wrapped with a touch of minerality, the Dassai 23 delivers delicate floral aromas with scents of green pears, pineapples, vanilla and angel food cake. Plus, a touch of petrichor. 

The aroma of wet stone minerality extends to the taste as well. Delivering a palate reminiscent of honey, Dassai sake 23 is extremely smooth and light yet deep with a layered structure. Flavours of muscat grape and marshmallows fill the mouth. 

A sake that is created for tasting, this brew is truly delicious and can be enjoyed by all. The best way to drink this yummy drink is on its own as an aperitif. The sensations that come with this brew are amazing. If you want to chill the drink, it is best to chill to the temperature of 10-12°C or drinking the Dassai 23 is perfectly fine at room temperature too.
